  • 4 tbs Vignoli Extra Virgin Olive Oil IGP Puglia – Intense + a little to grease the potatoes and the baking dish

  • 2 cups sweet potatoes (2 cups roasted and chopped sweet potatoes)
  • 2/3 cup chopped red onion
  • 1 cup soft dried plums
  • Salt to taste.
  • Pepper as needed.
  • 1½ teaspoon Vignoli Mandarin EVOO

  • Breadcrumbs to taste
  • 4 tbs Vignoli Extra Virgin Olive Oil IGP Puglia + a little to grease the potatoes and the baking dish
  • 550 g sweet potatoes (2 cups roasted and chopped sweet potatoes)
  • 100 g chopped red onion
  • 180 g soft dried plums
  • Salt to taste.
  • Pepper as needed.
  • 1½ teaspoon Vignoli Mandarin EVOO
  • Breadcrumbs to taste

Directions

  1. Heat the oven to 392 ° F in static mode.

  2. Cut the potatoes into thin slices, then place them in a pan with the bottom lined with baking paper and brush them with a little Vignoli Extra Virgin Olive Oil IGP Puglia – Intense.

  3. Cook for 20 minutes or until the potatoes are soft. Allow to cool, then cut into small pieces.
