We create our oils like no other. We select the best olives, while they are still on the tree and mill them our own way, walking with the olive from tree to table. We work with dedicated local Italian farms across the country. This enables us hand select our olives, pick them at their very best, and work in state-of-the-art facilities to create high-quality olive oil, consistently harvest after harvest. It’s a totally new way of creating and distributing olive oil, which is only possible because of our founder Claudio Vignoli and his expertise as both a master miller and olive oil sommelier.

Many producers own the land, olive trees, mill and sell their own oil, but what happens if the olive fly infests the crop, or a hailstorm destroys it? They are at the mercy of many unpredictable factors due to climate change. Other producers own the land and trees, but not a mill, putting them at the mercy of the miller and equipment operators when the olive most fragile. More still, buy oil in bulk from a mill or cooperative and relabel it as their own, having no control over the production process.
We use our strengths to hand-select the best olives while they are still on the trees. This means we can choose different olives every year, based on quality, mitigating the challenges of climate change and many variable factors. Since we buy the olives still on the tree, it ensures we can time harvest perfectly. We find the best equipment, as close to the olive groves as possible, with a focus on decreasing the time it takes to transport the olives to the mill. The olives are milled in the highest quality facilities and under strict conditions. Since our olives come from across Italy, we are also working with olive mills across the country as well. During the harvest season, our team is very dynamic and traveling continually making sure the oil is exactly as we want, so we can share the best Italian flavours through our very own award-winning extra virgin olive oil. We do it our way.
