We create our oils like no other. 
We select the best olives, while they are still on the tree and mill them our own way, walking with the olive from tree to table. We work with dedicated local Italian farms across the country. This enables us hand select our olives, pick them at their very best, and work in state-of-the-art facilities to create high-quality olive oil, consistently harvest after harvest. It’s a totally new way of creating and distributing olive oil, which is only possible because of our founder Claudio Vignoli and his expertise as both a master miller and olive oil sommelier.

Olives are harvested at optimal ripeness and carefully selected based on varietal, terroir, and seasonal conditions. Each batch is evaluated to ensure consistency in quality, flavor profile, and nutritional value.Harvesting methods prioritize minimal handling to preserve the integrity of the fruit and reduce oxidation before processing.

This controlled approach allows for greater precision during extraction and ensures a fresher, more stable olive oil.Only olives meeting strict internal standards are approved for production, guaranteeing traceability and quality from grove to bottle. Olives are processed in state of the art mills within maximum 4 hours from harvest.

After production in Italy, our oils are shipped directly to our Miramar (FL) facility, stored in insulated tanks filled with nitrogen, protected from heat and light. This shorter, more controlled journey helps preserve the oil’s freshness, aroma, and quality — so it reaches your home much closer to the moment it was made.

To preserve its freshness after arriving from Italy, the olive oil is stored in stainless-steel tanks designed specifically for high-quality extra virgin olive oil. Unlike typical storage that may expose oil to air and light, these tanks are sealed and protected with nitrogen, an inert gas that prevents oxidation.

Oxygen, light, and heat are the main factors that cause olive oil to lose its aroma and flavor over time. By replacing the oxygen in the tanks with nitrogen, the oil remains stable, fresh, and protected, maintaining the characteristics it had right after production.

The oil stays in these controlled tanks until just before bottling, which allows us to preserve its quality and flavor at the highest level before it is prepared for shipment to your home.

Most of our oils and vinegars are bottled in U.S. only after your order is placed.

This process applies to our extra virgin olive oils, infused oils, balsamic vinegars of Modena and infused vinegars of Modena, ensuring maximum freshness and flavor.

The only exception are our IGP-certified oils (Protected Geographical Indication). P.G.I. certification requires that the oil is produced and bottled in Italy under strict regional standards that guarantee its origin and authenticity.

For all other products, our on-demand bottling ensures you receive freshly bottled oil, prepared specifically for your order.

Once your order is bottled, it is quickly prepared for shipment from our Miramar facility. All orders are processed within 48 hours, ensuring your products leave our warehouse shortly after being freshly bottled.

You can choose between standard, express, or next-day delivery, depending on how quickly you’d like your order to arrive.

Because the oil is bottled only after you order and shipped immediately afterward, it reaches your home just days after bottling — not after months sitting on warehouse shelves.

Many producers own the land, olive trees, mill and sell their own oil, but what happens if the olive fly infests the crop, or a hailstorm destroys it? They are at the mercy of many unpredictable factors due to climate change.
Other producers own the land and trees, but not a mill, putting them at the mercy of the miller and equipment operators when the olive most fragile.
More still, buy oil in bulk from a mill or cooperative and relabel it as their own, having no control over the production process.

We use our strengths to hand-select the best olives while they are still on the trees. This means we can choose different olives every year, based on quality, mitigating the challenges of climate change and many variable factors. 
Since we buy the olives still on the tree, it ensures we can time harvest perfectly. We find the best equipment, as close to the olive groves as possible, with a focus on decreasing the time it takes to transport the olives to the mill. The olives are milled in the highest quality facilities and under strict conditions. Since our olives come from across Italy, we are also working with olive mills across the country as well. 
During the harvest season, our team is very dynamic and traveling continually making sure the oil is exactly as we want, so we can share the best Italian flavours through our very own award-winning extra virgin olive oil. We do it our way.
