  • 6 slices of wholemeal compact rye bread (German black bread – Schwarzbrot)
  • 12 tablespoon fresh goat cheese
  • to serve Vignoli Black Garlic EVOO

  • 12 large white grapes
  • 12 black peppercorns

  • 170 gr fresh goat cheese
  • to serve Vignoli Black Garlic EVOO

Directions

  1. Using a pastry cup or cookie cutter with a diameter of 2 inches, cut 12 discs from the slices of bread. The trimmings can be eaten as they are or made into croutons to be enjoyed in a Caesar Salad or vegetable soup.

  2. In a medium bowl, work the goat cheese together with a few drops of Vignoli Black Garlic Infused Extra Virgin Olive Oil using a fork until you get a smooth and creamy consistency (add a little milk if needed). Transfer to a pastry bag without a nozzle and cut the tip to obtain an opening of 0.6 inches.

  3. Insert a peppercorn on the top of each grape, at the point where it was attached to the stalk, pressing gently.

  4. Squeeze a little garlic goat cheese onto each disc of bread, creating a mound.

  5. Insert the grapes into the cheese, pressing gently to make them penetrate. Van Helsing’s canapés are ready to be served.
